Cheesy Broccoli Rice Bake Recipe | Easy and Delicious

This Cheesy Broccoli Rice Bake is one of the easiest dishes I’ve ever made, and it’s become a favourite around here! To get started, just cook up some fluffy rice, grate your favourite cheese, steam the broccoli until it’s just tender, slice an onion, and gather your flavourings. Mix everything together, pop it into a baking dish, and top with breadcrumbs and a sprinkle of cheese. Then, just wait for it to brown.

What’s not to Love?

A quick, comforting meal that works every time. And it’s a great way to sneak in some veggies. Tonight, I served it with buttery prawns, and it was the perfect combination for a cosy, no-fuss dinner.

  • Optional Flavourings: Feel free to experiment with grated ginger, dried chilli flakes, or mustard powder for a little extra kick.
  • Optional Vegetables: You can mix in peas, frozen vegetables, or even soybeans to add variety and extra nutrition.
  • Broccoli Stalk: Don’t forget to prepare the broccoli stalk! Peel and chop it, then steam it along with the florets. It adds a great texture to the dish.
  • Mayo Substitution: If you’re out of mayo, try using sour cream or yoghurt instead. Both work just as well in this dish!
  • Rice Choices: While I usually use medium white rice, brown rice gives a lovely nutty texture and works perfectly too.
  • Rice Quantities: One cup of raw rice typically makes three cups of cooked rice. I prefer using ½ – 1 cup of raw rice, cooked in my rice cooker, to ensure we have plenty for leftovers.
  • Double the Recipe: If you’re cooking for more, simply double the ingredients to make enough for 4-6 people.

Check out the recipe below—I’m sure you’ll love it as much as we do!
