Creamy Potato and Pasta Bake

Tonight, I made a simple and hearty potato and pasta bake for dinner. It’s a quick, reliable meal that works every time. It’s perfect for those nights when you want something filling but easy to put together.

This dish is one I always turn to for family dinners or potlucks. It’s always satisfying, it has that comforting, cheesy flavour that everyone enjoys and I love how easy it is to prepare.

To make it, you start by boiling cubed potatoes and pasta together until they’re nice and tender. While that’s cooking, sauté some onions and garlic in butter until fragrant. Then, add cream, milk, cheese, and Parmesan to create a rich sauce. Once the potatoes and pasta are done, mix everything together and pop it into a baking dish. Bake it until the top is golden and crispy.

The result is a delicious, cheesy bake that’s perfect for sharing. It’s always one of the first dishes to disappear at any gathering I bring it to.

My Take on the Recipe

One thing I love about this Cheesy Potato Pasta Bake is how easy it is to make ahead. You can prepare it in the baking dish, cover it with foil, and keep it in the fridge overnight. Then, when you’re ready, just bake it as usual. It’s also great for freezing—just thaw it in the fridge and bake when you’re ready.

If you want to switch things up, try experimenting with different cheeses. Tasty cheese is the base, but adding mozzarella gives it that extra gooey stretch, and sharp cheddar adds a little tang. You can even try blue cheese or gouda for a richer, deeper flavour.

Optional Variations

If you like a little heat, sprinkle some chili flakes or finely chopped fresh chili with the onions and garlic. It adds just the right amount of kick to balance the creaminess of the cheese.

For an extra crispy top, mix some breadcrumbs with melted butter and fresh herbs before baking. It adds a lovely crunch that contrasts beautifully with the smooth filling.

Serve it with a simple side salad to balance out the richness, or for a more indulgent meal, serve it alongside some garlic bread.

Creamy Potato and Pasta Bake: Pasta and potatoes are combined in a luxurious blend of cream, melted cheeses, and savoury onions and garlic, then baked until golden and crispy on top.


It is also a great dish to take for a pot luck dinner, hearty, hot and warming and whips up in a jiffy.

Ingredients

  • 2 cups potatoes, cubed
  • 2 cups dried pasta
  • 150 grams butter
  • 2 onions
  • 3 cloves garlic
  • 1 cup cream
  • 1/2 cup milk
  • 1 1/2 cup grated tasty cheese
  • 1/2 cup grated parmesan cheese
  • salt & pepper

Directions

  1. 𝗕𝗼𝗶𝗹: Boil pasta and potatoes together until tender, drain.
  2. 𝗠𝗮𝗸𝗲 𝗦𝗮𝘂𝗰𝗲: Meanwhile, melt butter in a large frying pan and add onions and garlic, cook for a few minutes. Stir in cream, milk, cheeses, cooked potatoes & pasta.
  3. 𝗕𝗮𝗸𝗲: Pour all into a large baking dish and bake at 200°C until crispy on top.
