I was going to make my usual ginger slice today, but I had a sudden craving for something more chocolatey and peanutty — and, well, a bit more fun!

I had a half-used jar of peanut butter in the pantry, so I thought I’d use it up. I played around with the old oat slice recipe and came up with something rich and chewy, topped with a simple ganache (just chocolate and peanut butter melted together) and scattered with chopped Snickers.
I can always count on Nisha for honest feedback — she’s great at spotting thoughtful tweaks and taste edits. So, after I had made a trial batch of this Snickers slice (without the caramel), she suggested adding a soft caramel layer to make it closer to a proper Snickers bar.
So that’s what I did for the second batch — and it absolutely works.

Second Time Around
The kitchen smelled amazing — like peanut butter cookies mixed with fudgy goodness. You get that warm golden syrup and toasted oaty smell — so comforting and warming.
The base is nice and chewy — that’s mostly from the peanut butter, with just a bit of butter added so it’s not too dry. Once it was baked and slightly cooled, I poured over the caramel, then topped it with a smooth mix of melted chocolate and more peanut butter. While the topping was still soft, I scattered over chopped Snickers bars and a few salt flakes.
Pop it in the fridge to set. It’s rich and pretty sweet, so you’ll want to slice it into small pieces. A little goes a long way, and big slabs might be a bit much. Every bite has that salty, crunchy, smooth combo — small is better, but you can always come back for more.



My Tips on the Recipe:
- I used crunchy peanut butter for a bit of texture, but smooth would work just as well too.
- If you like a sweet-salty contrast, a little flaky sea salt on top is lovely.
- Store it in the fridge during warmer weather — it helps the chocolate hold.
- It freezes well too. I’ve stashed a few pieces in the freezer for when the next craving strikes.

Snickers Peanut Butter Caramel Slice

Ingredients
- OAT BASE:
- 100g peanut butter (smooth or crunchy)
- 50g butter
- 1/2 cup brown sugar
- 1/4 cup golden syrup
- 1 1/2 cups rolled oats
- 3/4 cup self-raising flour
- 1/2 cup desiccated coconut
- 1/2 tsp salt (optional, enhances flavour)
- 395g tin sweetened condensed milk
- 100g butter
- 2 tbsp golden syrup
- 150g milk chocolate
- 2 tbsp peanut butter
- 2–3 Snickers bars, chopped into bite-sized pieces
- sea salt flakes
Directions
- Preheat the Oven: Preheat oven to 170°C and line a slice tray with baking paper.
- Make the Oat Base: In a saucepan, melt peanut butter, butter, brown sugar, and golden syrup until smooth. Remove from heat and stir in oats, flour, coconut, and salt until combined.
- Bake the Base: Press mixture into the tray and bake for 20–25 minutes until lightly golden. Let it cool slightly while you prepare the caramel.
- Make the Caramel Layer: In a saucepan, combine condensed milk, butter, and golden syrup. Heat over medium, stirring constantly, for 6–8 minutes or until thick and golden. Pour evenly over the base and return to oven for 5 minutes. Cool completely before topping.
- Make the Topping: Melt chocolate and peanut butter gently over simmering water or in the microwave. Stir until smooth.
- Assemble the Slice: Spread the chocolate topping over the caramel layer. While still soft, scatter chopped Snickers and sea salt flakes on top and press gently.
- Chill and Slice: Refrigerate until firm. Cut into small squares using a warm knife.
