Christmas Macarons: Perfectly Red with a Vibrant Matcha Green Filling

I have been making macarons for Christmas take-home goodie bags.

My favourite for this season is to showcase the colours of red and green. I also love everything gold for Christmas so I have been rather heavy handed with the gold glitter.

However, I did resist the temptation to fully cover the tops in gold and was very restrained, just used a smidgen across one side.

My Recipe

The recipe for the macaron shells can be found here. It is the Italian method and I have developed my own take after a huge amount of research and many trials. It works for me.

I normally don’t flavour the shells so the same recipe applies.

I decided to try a different buttercream recipe and it was rich and creamy… and used up all the egg yolks. I made it a vibrant green using matcha tea powder and it tastes good too. The buttercream recipe can be found here.
