This recipe makes a wonderfully fragrant ginger dough that can be cut any which way into shapes and figures to decorate… you don’t have to be expert just give it a go.
Get your hands into it and have fun with the kids. Your kitchen may end up with flour and icing from one end to the other but it’s fun and the cutie cookie results make it all worth while.







Tips for Gingerbread Cookies🍪🎄✨
- 1. Keep Butter Cold: Make sure the butter is cold to create a firmer dough, making it easier to roll out.
- 2. Chill the Dough: Chill for at least 20 minutes before rolling it out. This will help the cookies hold their shape.
- 3. Adjust Thickness: Roll the dough to about 5mm thick for a perfect crisp bite.
- 4. Use a Variety of Cutters: Get creative! Use different Christmas-shaped cutters for extra fun.
- 5. Bake in Batches: Leave space between cookies on the tray so they bake evenly.

Christmas Spice Cookies

A deliciously spiced Christmas cookie recipe, perfect for decorating with royal icing and sprinkles.
Recipe Credit: Not quite sure where this one came from—possibly from a recipe included with a set of cookie cutters I bought!
Ingredients
- 350g plain flour
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground ginger
- 1 tsp bicarbonate of soda
- 175g muscovado sugar
- 125g butter
- 4 tbsp honey
- 1 egg
Directions
- Whizz: Add the sifted flour, cinnamon, nutmeg, bicarbonate of soda, and ginger to a food processor. Add the sugar and butter, then pulse until the mixture looks like breadcrumbs.
- Add: Add the honey and egg to the processor and gently pulse until the mixture becomes a dough.
- Cool: Wrap the dough in cling film and place in the fridge for 20 minutes.
- Preheat: Preheat the oven to 180°C (fan bake) and line 2 baking trays with greaseproof paper.
- Roll Out: Lightly dust the workbench with flour and roll out the dough until 5mm thick. Use a variety of Christmas-shaped cutters to make shapes from the dough, re-rolling the offcuts to get about 20 cookies. Place on the trays and space apart evenly.
- Bake: Bake for 12-15 minutes until golden in colour, then remove from the oven and place on a wire rack to cool.
- Decorate: When completely cool, decorate with royal icing, sweets, and sprinkles.

- 4. Fresh Lemon Juice: Add lemon juice to stabilize the icing and balance the sweetness.
- 5. Storage: If not using right away, cover with a damp cloth or plastic wrap to prevent drying out.

A quick and easy royal icing recipe for decorating cookies, biscuits, and cakes. Sets in just 5 minutes.
Ingredients
- 1 egg white
- 1 1/2 cups Chelsea Pure Decorating Icing Sugar
- 1 tsp lemon juice
Directions
1. Whisk: Using an electric mixer, whisk egg white until light and frothy. Gradually add Chelsea Pure Decorating Icing Sugar and lemon juice to the egg white.
2. Beat: Beat at high speed until fluffy, thick, and shiny. Fill a piping bag with the mixture and pipe onto biscuits and cakes.
3. Set: The icing will set within 5 minutes.
