
This Cheesy Broccoli Rice Bake is one of the easiest dishes I’ve ever made, and it’s become a favourite around here! To get started, just cook up some fluffy rice, grate your favourite cheese, steam the broccoli until it’s just tender, slice an onion, and gather your flavourings. Mix everything together, pop it into a baking dish, and top with breadcrumbs and a sprinkle of cheese. Then, just wait for it to brown.
What’s not to Love?
A quick, comforting meal that works every time. And it’s a great way to sneak in some veggies. Tonight, I served it with buttery prawns, and it was the perfect combination for a cosy, no-fuss dinner.
- Optional Flavourings: Feel free to experiment with grated ginger, dried chilli flakes, or mustard powder for a little extra kick.
- Optional Vegetables: You can mix in peas, frozen vegetables, or even soybeans to add variety and extra nutrition.
- Broccoli Stalk: Don’t forget to prepare the broccoli stalk! Peel and chop it, then steam it along with the florets. It adds a great texture to the dish.
- Mayo Substitution: If you’re out of mayo, try using sour cream or yoghurt instead. Both work just as well in this dish!
- Rice Choices: While I usually use medium white rice, brown rice gives a lovely nutty texture and works perfectly too.
- Rice Quantities: One cup of raw rice typically makes three cups of cooked rice. I prefer using ½ – 1 cup of raw rice, cooked in my rice cooker, to ensure we have plenty for leftovers.
- Double the Recipe: If you’re cooking for more, simply double the ingredients to make enough for 4-6 people.

Cheesy Broccoli Rice Bake

A cheesy, rice, and broccoli bake— a comforting dish of fluffy rice, tender broccoli, and creamy cheese sauce, baked to golden perfection.

Ingredients
- 1 head of broccoli, broken into florets
- 1 spring onion, sliced (or 1 small red onion, finely diced)
- 1 clove of garlic, crushed
- 1 tablespoon oil
- 1 cup cooked hot rice
- 1 heaped tablespoon mayonnaise
- 1 tablespoon soy sauce
- ½ – 1 cup grated cheese
- Optional: chili flakes or mustard for added flavour
- 1 slice fresh bread, made into breadcrumbs in a food processor
Directions
- 𝗣𝗿𝗲𝗵𝗲𝗮𝘁: Preheat oven to 180°C (350°F).
- 𝗖𝗼𝗼𝗸: Microwave, boil, or steam broccoli until tender. Drain well
- 𝗠𝗶𝘅: In a large bowl, combine the cooked broccoli, spring onion (or red onion), crushed garlic, oil, hot rice, mayonnaise or sour cream, soy sauce, and half of the grated cheese. Add optional flavorings like chili flakes or mustard if desired.
- 𝗧𝗿𝗮𝗻𝘀𝗳𝗲𝗿 𝘁𝗼 𝗕𝗮𝗸𝗶𝗻𝗴 𝗗𝗶𝘀𝗵: Transfer the mixture into a greased baking dish.
- 𝗧𝗼𝗽𝗽𝗶𝗻𝗴: Top with the remaining grated cheese and sprinkle with breadcrumbs.
- 𝗕𝗮𝗸𝗲: Bake in the preheated oven for 20-25 minutes or until golden and bubbly. Enjoy the homemade goodness and happy cooking!
