Cheese and Onion Muffins

I do enjoy making muffins! There’s just something comforting about a warm, cheesy one with a nice crispy edge, fresh out of the oven.

I’ve made this recipe umpteen times and it always works. It’s perfect when unexpected guests pop in, because the mix is so forgiving and the ingredients are usually on hand. It only takes a few minutes to throw everything together and pop it in the oven.

They smell delicious when baking! That hot, crusty, cheesy aroma drifting through the house is just the best.


My Take on the Recipe

If you want the muffins hot and fresh from the oven to serve straight to your guests for morning tea at 10am, start preparing at 9am.

👉 For a generous morning tea, double the recipe but still make 12 muffins – you’ll get lovely large ones.

Reserve some of the grated cheese to sprinkle on top before baking. I realised today—after making them for the umpteenth time—that I’ve probably been using too much cheese. Who has time to measure grated cheese, right? I’ve just been eyeballing it and using about half a block… that’s 250g! Yikes! Oh well, more cheese tastes even better—yum.

I’ve used sour cream or even plain cream instead of yoghurt — not quite as tangy, but still just as tasty.

Nisha’s Choice

I don’t always use paprika, depending on who’s coming over. My daughter absolutely hates paprika and all things chili, so I leave it off when she’s around.

Sometimes I just pour the wet ingredients straight on top of the dry ones and give it all a hearty mix—it still turns out fine.

I’ve used small, medium, and large red onions—any size works, but I love a generous amount, so a large one is best for me. I’ve also used brown onions if red ones aren’t on hand, but be warned, that gives a stronger flavour and isn’t to everyone’s taste.

If you’re feeling a bit adventurous, try adding a touch of chili, mustard or something similar for a bit of a kick. 🌶️

A savoury muffin with a golden cheesy top, perfect for lunchboxes, picnics or a snack with a cuppa. Quick and simple to make!



Recipe Credit: Based on a handwritten recipe I’ve had in my collection forever.

Ingredients

  • 1½ cups flour (190g)
  • 1 Tbsp sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 2 cups grated cheese (200g)
  • 1 red onion, finely chopped
  • ½ cup milk
  • ½ cup yoghurt
  • 1 egg, beaten
  • ¼ cup melted butter (60g)
  • Black pepper, to taste
  • Paprika, for sprinkling on top

Directions

1. Preheat the Oven: Preheat oven to 190°C. Butter a muffin tray and dust with flour, or use paper cups.
2. Mix the Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder and salt.
3. Add Flavourings: Stir in cheese, chopped onion and black pepper.
4. Combine the Wet Ingredients: In a separate bowl, whisk together milk, yoghurt, melted butter and egg.
5. Mix Wet and Dry: Gently fold the wet mixture into the dry ingredients until just combined. Don’t overmix.
6. Spoon into Muffin Tray: Divide mixture evenly among muffin cups. Sprinkle paprika and a little extra grated cheese on top.
7. Bake: Bake for 20–25 minutes until golden and cooked through. Cool slightly before removing from tray.


Nutrition

Per muffin: 190 calories; 11 g fat; 16 g carbohydrates; 7 g protein; 2 g sugar.
