Sub-tropical Stormy Mojito

I named this mojito in honor of the sub-tropical storm we are currently experiencing. It should be hot and sunny at this time of year but for days now it has been sticky, raining and oppressively humid.

Nothing more to do…hunker down and make beautiful cocktails and enjoy happy hour at home.

  • 1 cup white rum
  • 1 tin lychee (also use the juice)
  • 1/4 cup passionfruit syrup
  • Handful of Vietnamese mint
  • 1 sliced lime

Mix all the ingredients together in a large jug and allow to infuse for at lease half an hour.

Pour over ice into beautiful glasses.

Top with soda water.
