I have been carried away by the red and green theme of Christmas and made these macarons to serve at our recent Christmas party. They seemed to disappear quickly and a few left overs (not many!) went home with our visitors!

It’s not often that I make 3 batches in one week but I did it!
Not only that, but each one was different. I made green macarons with strawberry Swiss butter cream filling, red macarons with Matcha French buttercream filling and unicorn macarons (pink, purple, blue) with bubblegum French buttercream filling.
For the macaron shells I used my recipe located here which is the result of many hours of research, trial and error to get the perfect bake every time. The Italian method is a little fiddly but it gives the best result, is reliable and the structure holds beautifully.
I have always loved using this method but of course any method you use is good because the result is so lovely. They are a cute mouthful, they look great and make a stunning food gift at this time of year.
Of course, a small touch of edible gold glitter on red just adds to the sparkle of Christmas… could not resist.
