A Proper Treat: Banana & Ginger Loaf

I made this loaf today and it turned out really well. It’s soft and moist with a lovely gingery flavour, and the smell while it’s baking is just good old-fashioned comfort—golden syrup and ginger always remind me of home baking days.

If you like a decent bit of ginger, this one’s for you. It’s got a proper kick—not just a faint hint—and it’s perfect with a cup of tea, especially on a chilly day.

What I Did Differently

The original ginger loaf recipe came from Dish magazine, but I’ve made a few changes. I had some ripe bananas that needed using up, so I mashed three in—and it goes beautifully with the ginger and orange. It also helps keep the loaf nice and moist.

It’s lovely just as it is, but if you feel like dressing it up, a butterscotch glaze is a nice extra. That said, I didn’t bother this time—it was so tasty fresh out of the tin with just a bit of butter on each slice.

It’s simple to make and very moreish. I’ll definitely be baking it again.

Banana & Ginger Loaf with Butterscotch Glaze

A beautifully spiced banana loaf sweetened with golden syrup and optional topping of warm butterscotch glaze.


𝗧𝗶𝗽 : This loaf tastes even better the next day. Store in an airtight container and warm slices slightly before serving for extra indulgence.

𝗥𝗲𝗰𝗶𝗽𝗲 𝗖𝗿𝗲𝗱𝗶𝘁: Originally from Dish magazine, with a few changes from Janet.

Ingredients

  • 1 cup golden syrup
  • ½ cup water
  • 75g butter
  • ½ cup brown sugar, tightly packed
  • Zest of 1 orange
  • 2–3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 2 cups plain flour
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 2 Tbsp ground ginger
  • ½ tsp mixed spice
  • ½ tsp salt
  • ¼ cup crystallised ginger, thinly sliced

  • Optional Butterscotch Glaze:
  • ½ cup brown sugar, packed
  • ¼ cup cream
  • 1 tsp vanilla extract

Directions

  1. Preheat: Preheat oven to 150°C. Grease and line a loaf tin.
  2. Heat Wet Ingredients: In a saucepan, combine golden syrup, water, butter, brown sugar, orange zest, and vanilla. Heat gently until butter and sugar are melted. Cool for 15 minutes.
  3. Sift Dry Ingredients: In a large bowl, sift together flour, baking soda, cinnamon, ginger, mixed spice, and salt.
  4. Combine: Pour the cooled syrup mixture and mashed bananas into the dry ingredients. Stir until smooth and well combined.
  5. Bake: Pour into the prepared tin and scatter crystallised ginger on top. Bake for 35 minutes. Cover loosely with foil to prevent over-browning and bake for a further 35 minutes, or until a skewer comes out clean.
  6. Cool: Allow the loaf to cool completely in the tin before glazing.
  7. Make the Glaze: For the butterscotch glaze, combine brown sugar, cream, and vanilla in a saucepan. Bring to a boil, then simmer for 5 minutes. Cool slightly before drizzling over the loaf.

Per Serving: 320 calories; 10 g fat; 50 g carbohydrates; 3 g protein; 150 mg sodium.
