Sunday Sauce is a great way to prepare for meals in the week ahead. I made a half recipe of this sauce and used it as a base for 3 different meals during the week.
I made gnocchi, tomato soup and Moroccan pork, all yummy…and easy to make.

Sunday Sauce:
- 1/2 cup olive oil
- 3 cloves garlic
- 70g tub tomato paste
- 3kg tomatoes or 7 x 400 cans of tomatoes
- 1 Tbsp sugar
- 2 tsp salt
- 1 tsp vinegar
- 1 tsp white pepper
Heat oil and add tomato paste, cook for 1-2 minutes, add remaining ingredients and simmer for 40 minutes. Cool and store in the fridge for up to a week.
Use 2 cups of Sunday Sauce and add flavours for different meals:
🌮Mexican- add Mexican spices or taco mix, lime juice, coriander.
🍛Indian- add curry powder, garam masala, mustard seeds, turmeric.
🍝Italian- add pesto, olives, capers.
🇲🇦Moroccan- add Moroccan spice mix.
🍲Thai- add red curry paste.
🇫🇷Provencal- add thyme, rosemary leaves, bay leaf.
🍚Chinese- add hiosin, grated ginger, sesame oil, soy sauce.
